Week 18 (Year 4): Making Refreshing Rhubarb, Summer Strawberries and Peppermint Jam from my Allotment…

After a good harvest of Rhubarb and being a little tired of Crumbles, I decided to make a jam. Of course, it is straight-forwards if you follow a Delia recipe and keep it simple:

Strawberries and sugar on a very low heat.

Just sugar (with added Pectin) and Rhubarb. And then add strawberries

A bowl of strawberries

Rhurbarb heating up and softening with sugar.

Adding Strawberries and two sprigs of Mint (which is kept whole otherwise you end up with bits in the jam)

Boiling up the fruit mush

Filling the Jars (heated in the oven to be warm)

A finished jar of Jam
